Summer is almost officially here, and with it some of my most favorite fresh foods. I always look forward to the farmers markets and when our grocery stores get in all the locally grown produce. Certainly, I feel so blessed to have access to pretty much anything we desire to eat year round. But there’s nothing that tastes as good as the food grown in your own backyard. My husband has a green thumb and enjoys growing vegetables for us. I reap the benefits. Two of my most favorite veggies are tomatoes and cucumbers. And typically you get quite a few when you grow them. So this is a delicious vegetarian summer salad that we eat often once our vegetables are ready to be picked. You can of course customize to your liking, including omitting the cheese to make it vegan. Enjoy!
Ingredients
1-2 medium size tomatoes
1 English cucumber
1 small onion (I like the red/purple onions)
1/4 to 1/2 cup feta cheese (omit for vegan)
Dressing of your choice (I like oil and vinegar)
Dash of garlic salt (optional)
Dash of fresh ground pepper (optional)
Dash of dill weed (optional)
Chop up tomatoes and onion. Peel and slice cucumber. Place cut up veggies in mixing bowl. Sprinkle in feta (if using), and seasonings. Drizzle with dressing of your choice. Toss to mix together. Enjoy!
