Maple + Date + Dark Chocolate = Delicious Treat

Ok…so when I went into the kitchen with the intention of making myself some simple, low sugar, high protein bars, something went wrong and I derailed. Instead, I got carried away and these turned into more of a dessert. It happens sometimes. I also just can’t resist our homemade Maple syrup! It’s so darn delish! The good news is that they are still healthier than all the Easter candy that I have been eating. These little treats are definitely higher in sugar than what I usually make, but they still pack a punch with a good amount of protein, fat, and fiber. Enjoy!

Recipe

1/2 Cup Oats

1/2 Cup Almond Flour/Meal

1/3 Cup Coconut Oil

1/3 Cup Natural Peanut Butter

1/3 Cup Dark Chocolate Chips

2 Scoops Protein Powder (unflavored, vanilla, or chocolate)

8 Dates

3 Tablespoon Maple Syrup

2 Tablespoon Peanut Butter Powder

1 Tablespoon Cacao Powder

1 Tablespoon Warm Water

1/2 Tablespoon Vanilla Extract

In small saucepan melt peanut butter and coconut oil together over low heat then let cool slightly…place the dates and warm water in food processor and pulse to mince dates…mix all ingredients in bowl and stir to combine well…press mixture into bread pan or similar size pan. Optional – I drizzled extra maple syrup on top and added more dark chocolate chips…chill if you prefer, but I didn’t find refrigeration necessary.
