Healthy, Fudgy, Vegan Bites!

I have been in the mood for making food lately! I usually like to keep some sort of a homemade protein snack around for when I want something quick and easy to munch on. While there’s no shortage of store bought protein bars to pick from…once you learn just how quick and easy it is to make your own healthy, tasty, & inexpensive protein bars and snacks, you wont look back! The best part is you know exactly what is in your food. No mystery ingredients…no added fake sugars…only real food.

I hope you enjoy this dark chocolate, fudgy, vegan snack recipe!

Recipe

1/3 Cup Coconut Oil (Find the one I used this here)

1/2 Cup Natural Peanut Butter

1/3 Cup Oats

1-2 Scoops Vegan Protein Powder (Find the one I used here)

6 Pitted Dates

1 Tbsp. Raw Cacao Powder

1 Tbsp. Ground Flax

1 Tbsp. Warm Water

1/2 Tbsp. Chia Seeds

1/2 Tbsp. Vanilla Extract

Handful of Dark Chocolate Chips (or dried fruit if you prefer)

Lightly warm to soften coconut oil and peanut butter together…Place dates in food processor with the Tbsp. of warm water and pulse…Add all ingredients to a mixing bowl and stir together… Spread into a bread pan or baking dish…chill in fridge for at least one hour so it’s easier to cut into delicious little bites! Enjoy!
