Date & Nut Bites

I love when super simple recipes turn out to be super delicious treats! This is one of them. I had a sweet tooth last week and couldn’t figure out what I wanted to snack on. I had already eaten way too much candy and needed something that was made of actual food instead of high fructose corn syrup. Dates are naturally sweet, but also have good for you fiber as well as other nutrients. Because of their texture and consistency, they are awesome for making sticky, gooey, sweet treats. Just what I wanted! These Date & Nut Bites are super easy, vegan, and delish! What’s not to love. I hope you enjoy them as much as I do.

P.S. I tested these on my brother and he said they would be even better with chocolate chips…so there’s an idea for an add in too!

Recipe

1 1/2 Cup Pitted Dates

1/3-1/2 Cup Nuts… I mixed almonds and cashews

1/4 Cup Coconut Flakes

1 Tablespoon Vanilla Extract

1 Tablespoon Warm Water

Pinch of Sea Salt

Add all ingredients to a good high speed blender or food processor and pulse until mixed well. Because the dates are so sticky, you might have to use a spoon and push mixture back down to keep processing and mixing. Once processed well, form mixture into bite size balls and store in covered container. Enjoy!
