LOVE THIS BRUSCHETTA!

Anyone who knows me at all knows I LOVE BREAD. Yes, I am well aware that it is nothing more than a giant loaf of carbs. I DON’T CARE! The truth is bread just doesn’t seem as popular as it once was. With the rise of certain diets, (keto, low/no carb), as well as food sensitivities, (gluten), my beloved bread has been demonized. However, I am not going to try to convince myself, or you, that eating lots of bread is healthy. I do know better. But knowing better and caring are two completely different things. So, I’m here to publicly declare my love of bread. And the way I’m loving it right now is with this bruschetta recipe, (my Mom’s, slightly altered), made with tomatoes and basil from our garden. It just doesn’t get any better. I hope you love it as much as we do…Enjoy!

Recipe

1 Loaf Of Good Bread, sliced into about 1/2 in thick pieces, I like sourdough

1/4 Cup Olive Oil

1 Handful Of Fresh Chopped Basil, more or less to your taste

8 Roma Tomatoes Diced, or about that much of any tomatoes you have, I used a variety of cherry, Roma, and Wisconsin Purple tomatoes

1 Tablespoon Red Wine Vinegar

1 Tablespoon Balsamic Glaze

1 Heaping Spoonful Minced Garlic

1/4 Cup Grated Parmesan Cheese, (omit for vegan)

Garlic Salt & Pepper to taste

Combine all ingredients in bowl…cover and let flavors combine for about 1hr…serve on toasted, delicious bread!
