Easy Fried Zucchini Fritters

If you are someone who enjoys planting a garden in the Spring, chances are that you probably included at least one zucchini plant. It’s also likely that you were trying to figure out what the heck to do with all the zucchini that you ended up with! At least that’s what happens to us each year that we do a garden. Well, this year I discovered a new way to use it up…easy, fried zucchini fritters! Ok, so it may not be the healthiest way to prepare zucchini…but it sure is good. I have made them several times now and I can tell you the recipe is not super precise due to the different size zucchinis that I have used. But they seem to turn out delicious anyways. I have also made these with adding a shredded carrot, which was tasty, so don’t be afraid to play around with the ingredients and make it your way! Enjoy!

Recipe

1 Zucchini, medium size, peeled and shredded with box grater, and squeezed dry in mesh food bag or pressed dry in colander

2-3 Green onions or one small onion finely chopped

1 Egg

1/2 Cup Italian bread crumbs

1/2 Cup flour, more or less depending on thickness desired…you want to end up with a slightly thick, chunky looking batter that you can drop into pan by spoonful

1/4-1/2 Cup Shredded Sharp Cheddar

1 Tablespoon minced garlic

3/4 Tablespoon of Italian Seasonings Blend

Salt and Pepper to taste

Oil or Butter for pan frying

Mix all ingredients well in bowl…you should end up with something that looks like chunky batter…heat oil or butter in pan (I like cast iron) over medium heat…drop by spoonful into pan…cook one side until set up and lightly browned…flip to fry other side…cook to desired browned crispiness…serve and enjoy!
