Confession…we LOVE salsa. We might eat an abnormal amount of it. Most of the time it’s one of our favorite store bought brands. However, right now our garden is producing like mad so we have lots and lots of veggies to use up. Homemade fresh salsa is such an easy & healthy snack to make! If you can cut up some veggies, you can make it! This is the recipe I made 3 times in the last week! I hope you enjoy!
Recipe
2-3 Tomatoes, depending on size/variety
1 Green Pepper, medium in size
3 Green Onions
Hot/Jalapeno Peppers to taste (I used 2)
1 Tablespoon Chopped/Minced Garlic
1 Tablespoon Lime Juice
1 Tablespoon Lemon Juice
1 Tablespoon Vinegar (I used white…but some people like Apple Cider Vinegar)
Chili Powder, Cilantro, Basil, Garlic Salt- All to your taste. I am heavy handed with ALL spices.
Chop all veggies to your preferred size for salsa eating…place veggies in bowl with lid…add liquids and spices and stir to mix…cover and let sit or refrigerate for at least 1 hour so flavors melt together. Enjoy with your favorite tortilla chips! Or do what my husband does…eat it with just a fork!
