I have been craving something made with oatmeal lately for some reason. I don’t know, maybe it’s the weather? I was looking in the pantry for my usual protein bar ingredients when I noticed that I had some dried cranberries that needed to be used up. I do not remember if I have ever made a snack bar with cranberries before, but I thought what the heck! These protein bars turned out pretty darn good, so I thought I would share them with you. Easy, vegan, and healthy snack! Enjoy!
Recipe
1/2 Cup Oatmeal
1/2 Cup Almond Meal/Flour
1/2 Cup Coconut Oil
1/2 Cup Dried Cranberries
1/4 Cup Pumpkin Seeds
1/4 Cup Dark Chocolate Chips
1 Scoop (about 35g) Vanilla Protein Powder
1 Teaspoon Vanilla Extract
1 Teaspoon Warm Water
Melt coconut oil over low heat in saucepan on stovetop…set aside to cool slightly…then combine all ingredients and mix well in bowl…press mixture into bread pan or pan of similar size…you can refrigerate if you like, but I didn’t find it necessary. Hope you enjoy!
