I’m really excited to share this recipe with you today because this little gem is not only a tasty, crunchy snack, it’s also loaded with good stuff! Pumpkin seeds & flaxseeds are tiny little nutritional powerhouses. Dates add a natural sweetness along with a good dose of fiber. And the coconut oil and peanut butter provide some good fats as well. I hope you enjoy it as much as I did!
Recipe
1/3 Cup peanut butter
1/3 Cup coconut oil (I used this)
1/3 Cup pumpkin seeds
1 Tablespoon flaxseed meal
2/3 Cup almond meal/flour
1-1/2 scoops vegan protein powder
9 pitted dates
1 Tablespoon warm water
Handful of dark chocolate chips
In small saucepan over medium/low heat melt coconut oil and peanut butter together…set aside…place dates and tablespoon of warm water in food processor and pulse until small pieces…in medium size bowl add protein powder, almond meal/flour, flaxseed, pumpkin seeds, and the processed dates…stir in peanut butter & coconut oil mixture until well mixed…pour mix into glass dish (I used bread sized)…sprinkle with desired amount of dark chocolate chips…place in fridge to set up for at least 1hr before devouring!
