Falafel Pitas

Hooray! It’s Meatless Monday! OK…so everyday is meatless for me. But this Falafel Pita Recipe is so good, that I am that excited to share it with you! If you have never had falafel you are missing out on a delicious Mediterranean food. The main ingredient in falafel is garbanzo beans, also known as chick peas. The great thing is you can spice them up as much or as little as you like. This is a very easy recipe to make and turns out perfect every time I make it…which is like 3 times in this last week. Yes, I like it that much. I hope you give it a try!

Recipe

pita bread

1 can drained and rinsed chick peas

lettuce

tomato

1/3 cup diced red onion

2 tablespoon minced garlic

3 tablespoon flour

1/4 teaspoon parsley

1/4 teaspoon basil

1/4 teaspoon cumin

1/4-1/2 teaspoon garlic salt to taste

dash of cayenne pepper

dash of black pepper

dash of lemon juice

olive or vegetable oil for frying (I use both together)

Add all ingredients to food processor or high speed blender…pulse until well chopped and mixed…heat oil in pan (I like cast iron) over medium heat…form falafel into patties and place in pan to fry until golden brown on each side… assemble pitas with sauce (recipe below), and choice of toppings…I like lettuce and tomato. Enjoy!

Falafel Pita Sauce

1/2 cup plain Greek yogurt

1 teaspoon minced garlic

1 teaspoon lemon juice

1 teaspoon dill

garlic salt to taste

black pepper to taste
